1、看切面是否平整

3、材料
常見的菜刀材料有碳鋼、不鏽鋼、高端合金鋼和陶瓷，各有優缺點。
碳鋼材料比較堅硬，普通的碳鋼板也容易製作出硬度高的刀，保持性很好，物美價廉。
不足之處在於碳鋼切削刀具在切削某些食物時，材料會起反應氧化變色；此外易生鏽，在使用後必須擦乾。未使用時，宜用油擦淨。
不鏽鋼廚刀是家庭廚刀的主流，含有除鐵以外的其它活性金屬，所以不鏽鋼刀不易生鏽，也更美觀，更容易存放。不足之處在於不鏽鋼菜刀比碳鋼菜刀切菜手感差，且刀刃相對不易磨利，硬度較低。
高端合金鋼材質刀是一種高碳低鉻的鋼材，具有極好的折中特性，既不容易生鏽，又不容易變形，可長期保存。缺點是價格太高。
陶瓷刀多採用納米材料「氧化鋯」作為加工原料，硬度極高，外觀輕巧，耐高溫，耐腐蝕，持久鋒利，性能穩定，不會與原料發生反應。 缺點是非常脆，要輕拿輕放。
廚刀類別
華人會用到的廚刀主要分為中式、日式和西式。以下逐一介紹：
中式廚刀
過去中國餐飲界一直流傳着「中餐廚房一把刀」的說法，剁、切、拍、剖、剔，一人一刀就可全部完成，但其實細分是有很多種類的，並不像外界認為中餐切菜很不講究。中式廚刀里片刀、桑刀、文武刀、拍片刀、片皮刀、斬骨刀、燒臘刀等各種類型應有盡有，不勝枚舉。
中式廚刀的區別往往體現在重量、開刃角度、刀背、手柄這些細節。
西式廚刀

（3）剔骨刀（Boning&Fillet Knives）
